HOG Rally on Tybee Island

Love motorcycles? You’ll want to be on Tybee Island September 11-13, 2008 for the Georgia HOG Rally. HOG stands for Harley Owners Group and this is NOT a Hell’s Angel rally, but a Harley motorcycle enthusiasts’ rally. The event is being organized by Savannah’s local Harley-Davidson dealer.

Spanish Moss

One of the things that makes our area so beautiful is our Spanish Moss. It hangs in the trees and creates a picturesque scene of southern living and lazy afternoons.

Tides

If you live on an ocean, you live by the tides. Tide Tables are published in the newspaper, and tide information is given at every weather report. Boaters and fishermen live and die by the tides, as if they don’t understand them, they can become stranded. Tybee Island can get tides as high as 12 feet, bringing the water right up to the Tybee road. And sometimes, when it rains and we have a particularly high tide, the water can cover the Tybee Road!

Oysters

          Oysters are not only delicious, but they’re also one of the most nutritionally well balanced of foods, containing protein, carbohydrates and lipids. The National Heart and Lung Institute suggest oysters as an ideal food for inclusion in low-cholesterol diets. Oysters are an excellent source of vitamins A, B1(thiamin), B2 (riboflavin), B3 (niacin), C (ascorbic acid) and D (calciferol). Four or five medium size oysters supply the recommended daily allowance of iron, copper, iodine, magnesium, calcium, zinc, manganese and phosphorus.

Easy Baked Fish Meridian

Have some fish and don’t know how to cook it? Want something kind of elegant? This is easy and elegant and doesn’t take much effort.

1 1/2 to 2 lbs. of fish (scallops are excellent, as well)                        
flour seasoned with salt & pepper*
about 2 cups cream

Rinse and pat dry the fish or scallops. Roll in seasoned flour and place in shallow, buttered casserole. Dot with butter and pour in cream–enough to come half-way up on fish or scallops. Bake at 350 about 30 minutes or until fish flakes easily with fork. Serve with lemon wedges.

*You may want to add your favorite seafood seasoning, such as Old Bay, or even some garlic powder, and serve over linguine. Yum!!
