A Mess ‘o Shrimp

You’re in shrimp country! Don’t know how to cook it? We can help. Here’s a simple and easy recipe.
Buy raw, fresh shrimp, preferably Georgia shrimp, at one of Tybee’s locations: Tybee Market at 1111 Butler; Lazaretto Creek Seafood at Old Hwy 80; Bowie’s at the first light on Tybee. Fresh shrimp is always best as frozen shrimp can be mushy. One pound of nice sized shrimp will be 18-22 pieces.
Rinse the shrimp and put them in a large kettle and cover with water. Turn on heat.
When the water just begins to boil, the shrimp should be pink. DO NOT BOIL the shrimp. Remove it from the heat and rinse in cold water. You can serve it now for a hot dish, or chill it for a cold “shrimp cocktail” dish. Make sure you REMOVE THE SHELLS before you eat them. If you pinch the tail and pull gently, the shell should come off. You may also need to remove the sand vein down the back of the shrimp with the tip of a knife. Serve with cocktail sauce.
Cocktail sauce: Take ketchup, worchestershire sauce, horseradish, lemon juice or lime juice and mix to taste. Horseradish will be hot, so go easy and add gradually until you get it as you like it.
